What's actually going on when your oven won't heat evenly
Uneven heat means the oven can't hold a steady, uniform temperature across the whole cavity. Something's either producing the wrong amount of heat or failing to move it around.
The four usual suspects: a failing element, a drifting temperature sensor, a stalled convection fan, or blocked airflow. On gas ovens, add a weak burner flame to that list.
Here's the fast diagnosis. Put an oven thermometer on the center rack, set 350, wait 20 minutes, and read it. That one test tells you whether you've got a calibration problem or a hardware failure.
If your food browns unevenly, pay attention to the pattern. Top-to-bottom unevenness points at an element. Front-to-back or one-sided points at airflow, the convection fan, or a partial burner problem.
The likely causes, ranked by what I actually find
On electric ovens, a failing bake element is the most common culprit you'll see. They don't always die all at once. A half-dead element heats weakly, so the bottom of your food stays pale while the top overcooks.
The temperature sensor is a close second. It's a thin metal probe in the upper back of the cavity, and over years it drifts. When it does, the oven thinks it's hotter or cooler than it really is, and heating cycles get erratic.
Convection ovens add a fan into the mix. When that motor seizes or the blade jams, the even airflow you paid for disappears and you get hot spots, usually darker toward the back.
Gas ovens have their own version of this. The burner flame should be solid blue across the whole tube. Clogged ports from spills leave part of the flame yellow or missing, so that end of the oven runs cool.
The boring cause I fix constantly: foil on the oven floor. It blocks the vent and reflects heat back at the element, throwing everything off. People swear it can't be that simple. It usually is.
The expensive cause, and thankfully the rarest, is a failing control board or relay. If you've ruled out everything else and it's still uneven, that's the prime suspect.
